Recipes for Diabetics American Diabetes Association published by Texas Department of Agriculture
It is estimated that the incidence of diabetes increases at the rate of six percent per year. As the number of diabetics increases so does the need for new sources of recipes specifically designed for use in the diabetic diet. This is particularly important because dietary management is the basis for controlling the disorder.
Because we have received numerous requests for diabetic recipes, the Texas Department of Agriculture has published this cookbook to help meet that need. As the title indicates, even those persons who are not diabetic will find these recipes to be satisfying. Those who are weight conscious will also find the cookbook helpful as the total number of calories per serving is shown.
Janie Sieberg, B.S., M.A., R.D. calculated the diabetic exchange list values for the recipes and wrote the section on nutritional labeling. Mrs. Sieberg is Executive Director of the Texas Dietetic Association. In addition, she is a private dietary consultant, Instructor of Nutrition for the Correspondence School and Dietary Consultant for the Adult Cardiovascular Fitness Program, Department of Health and Physical Fitness, both at the University of Texas at Austin. Her professional memberships include the American Dietetic Association, the American Diabetes Association and Dietitians in Diabetes Care and Education.
